Daughter Erin and her friend Audrey often made Pumpkin Chocolate Chip Cookies during their school years. I did have the recipe at one time but thought Erin had taken it. Every couple of years she asks me if I have the recipe and I tell her no, I thought you had it.
She asked again a couple weeks ago as Audrey had asked her for the recipe. Nope, I still don't have it. Well, she must of hunted it down because I got a message from her with the recipe. Yay!
So, I have it now and will share with you here so I know where to find it when she asks me next time.
Erin's Pumpkin Chocolate Chip Cookies
4 cups unsifted all-purpose flour
2 cups quick or old fashioned oats, uncooked
2 tsp baking soda
2 tsp ground cinnamon
1 tsp salt
1-1/2 cups butter, softened
2 cups firmly packed brown sugar
1 cup granulated sugar
1 egg
1 tsp vanilla
1 can pumpkin
1 cup semi-sweet chocolate chips
Preheat oven to 350
Combine flour, oats, soda, cinnamon and salt; set aside
Cream butter, gradually add sugars, beating until light and fluffy
Add egg and vanilla, mix well.
Alternate additions of dry ingredients and pumpkin, mixing well after each addition.
Stir in chocolate chips.
Drop cookies onto cookie sheet in teaspoon size drops
Bake 8-9 minutes.
This recipe makes a LOT of cookies.
I had snack duty at my Friday sewing group last week so made these cookies. I made them a bit larger than the teaspoon size as I used this scoop.
