Summer

Carol here ~

There's been a whole lot of this going on during these hot summer days.

Great niece Annie is swimming like a fish and I don't think her brother Alex is far behind.  So fun to watch them and think back to when I was a kid and doing the same thing.

I took my car into Auburn to be serviced yesterday and when I was gone Dan went and picked more blueberries.

We are going to freeze a few packages in two cup quantities as that is the amount needed for the Easy Batter Fruit Cobbler he makes ~ be nice to have a blueberry treat in the middle of winter.

I don't know if I ever shared the recipe with you so here it is ~

Easy Batter Fruit Cobbler

4 tablespoons butter
3/4 cup all purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
2 cups blueberries (or any other berry)
1 tablespoon sugar

Preheat over to 350

Put butter in 8-in square or 9-in round pan, place in the oven until butter is melted.  Remove the pan from the oven and set aside.

Whisk flour, 3/4 cup sugar, baking powder and salt in a medium bowl.  Whisk in milk until a smooth batter forms.

Pour batter into the prepared pan with melted butter.

Scatter fruit over batter, sprinkle with 1 tablespoon sugar.

Bake until top is lightly browned and fruit bubbles 50 - 60 minutes.

Serve warm with vanilla ice cream.

Wicked good!

We've started to get cucumbers and tomatoes.  As usual, once they start we have way too many.  Dan has already been giving cukes to the neighbors.

We have been lucky with the storms, they have mostly gone around us.

Here is an excerpt from my grandmother Lena Cushman's journal ~

July 1939

The lightning struck the White cottage and did the jitterbug around.  Tore splinters off the floor, steps and porch.  Tore shingles off the roof and side of cottage.  Lifted a rock from the flower bed and threw it nearly over to our camp.

That must of been quite the storm!  I love how she describes the lightning strike as doing the jitterbug!

Stay cool!
